Every year I love to set a few New Years resolutions and one always includes nutrition, usually some form of consuming less sugar. As the years have gone by I realize that although I wish I had the will power to eliminate it, I love sugar way too much so a more realistic goal is to limit it. This recipe is a nice balance of some nutrients (granola, nuts, dried fruit…the dried fruit is debatable!) and some sugar (maple syrup, brown sugar and chocolates!). You can definitely use less of the sweet part and pleas let me know how you like it or what modifications you’ve made❤️
Ingredients ❤️
3 C rolled oats
1⁄2 C Macadamia nuts
1/2C chopped walnuts (or any nut you want)
3/4 C shredded sweet coconut
2 T dark brown sugar
1 C raisins (or mix of dried fruit)
1/4 C Vegetable oil
1/4 C Maple syrup (use less if watching your sugar intake)
3/4 t Salt
*bonus chocolate candies (since it’s February we used valentines M&Ms)

Preheat oven to 250 degreesIn large bowl, combine rolled oats, nuts, coconut, and brown sugar.In a separate bowl, combine maple syrup, oil, and salt.Combine both mixtures, mixing until the dry ingredients are coated evenly. Pour onto 2 sheet pans. Bake in oven for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color. Remove from oven and transfer into a large bowl. Add raisins (or any dried berries and chocolates) and mix until evenly distributed.
